Pork Enchiladas

Ingredients:
3 to 4 cups of pork roast, shredded
1 can of green chilies
1 onion, diced
3 cups of water
2 large or 4 small cans of tomato sauce
1 Tablespoon of garlic powder
2 teaspoons of salt
½ teaspoon of pepper
1 ½ teaspoons of sugar
1 teaspoon of cumin
¾ teaspoons of oregano
6 Tablespoons of flour
1 pkg. of 8” flour tortillas (10 count)
1 (8 0z) pkg. of shredded Monterey Jack cheese
1 (8 0z)
 
Instructions:
Shred pork roast. Add green chilies and onion to the meat mixture. In a shallow bowl combine water, tomato sauce, garlic powder, salt, pepper, sugar, cumin, oregano until well blended. Add 2 cups of the sauce to the meat mixture and blend well. With the remaining sauce, dip each flour tortilla into the sauce to coat them one by one. After dipping each in sauce, spoon 3 Tablespoons of meat mixture
