Food Faves Roxie’s Stromboli

 

This week’s recipe is by AVECC Member Services Representative, Roxie Smith of Ozark.

“This is an easy go-to recipe that my family loves. Just pair it with a salad and supper will be a success!” Roxie Smith, AVECC Member Services Representative

Ingredients:

  • 2 loaves for Rhodes frozen bread (thawed)
  • ½ cup pizza sauce
  • 6 slices provolone cheese
  • 1/2lb hamburger meat (browned)
  • 1/2lb Italian Sausage (browned)
  • 4oz pepperoni
  • 6 slices Canadian bacon cut into quarters
  • 1 small onion (chopped)
  • 1 green bell pepper (chopped)
  • 1-4oz Jar mushrooms (drained)
  • 1 small can sliced black olives (drained)
  • 1 cup mozzarella cheese
  • 1 egg beaten

Directions: 

  1. Preheat oven to 425 degrees
  2. In a large skillet, cook hamburger meat and sausage until brown. Drain.
  3. Roll the dough out on floured parchment paper into a rectangle. Roll out until thin or the thickness you like.
  4. Spread pizza sauce on dough.
  5. Layer with provolone cheese, meat, pepperoni, Canadian bacon, onion, bell pepper, mushrooms, olives, and mozzarella cheese (or other desired toppings)
  6. Roll second loaf of bread out and place on top of the toppings and seal the edges together. Brush egg on dough and cut slits in the top.
  7. Bake for 20-25 minutes until golden brown.
  8. Cut into squares. Serve hot.

NOTE: all toppings are optional

Food Faves “Carley’s Fluff Cookies”

Strawberry Fluff Cookies

  • 1 stick of butter (8 Tbl.)
  • 8 0z cream cheese
  • 1 egg
  • 1 tsp. vanilla
  • 2 Tbl. Of Strawberry jam/preserves
  • 1 box Strawberry cake mix (15.25 oz)
  • 1 bag of premium white chocolate chips
  • ½-1 cup of powdered sugar

Lemon Fluff Cookies

  • 1 stick of butter (8 Tbl.)
  • 8 0z cream cheese
  • 1 egg
  • 1 tsp. vanilla
  • 1 Tbl. Of Lemon extract
  • 1 box Lemon cake mix (15.25 oz)
  • 1 bag of premium white chocolate chips
  • ½-1 cup of powdered sugar

Directions:

  • Cream together room temp. butter and cream cheese
  • Add one egg, vanilla, and extract/jam
  • Mix in dry cake mix
  • Stir in white chocolate chips
  • Put in refrigerator for 2-3 hours or freezer for 1 hour
  • Heat oven to 350*
  • Create large rounds of cookie dough (a litter bigger than a golf ball)
  • Roll in powdered sugar
  • Bake for 20-25 mins. Depending on the size of cookie
  • Let cool

Food Faves “Rachel’s Frito Chili Cheese Fiesta Corn Salad”

Rachel’s Frito Chili Cheese

Fiesta Corn Salad

“My wife Rachel makes an awesome corn dip made with my favorite, Fritos Chili Cheese Chips. It is easy and delicious. You can’t get much better than that!” -Brandon Fisher

Ingredients:

  • 1 (15 ounces) can of whole kernel corn, drained
  • 2 cans of fiesta corn, drained
  • 2 cups of grated cheddar cheese
  • 2/3 cup of mayonnaise
  • 2/3 cup of sour creme
  • ½ cup chopped onion of choice
  • 1 (10 ½ ounce) bag of Frito’s Chili Cheese corn chips

Instructions:

  • Drain corn and dice up the onion
  • Mix all of the ingredients except for chips
  • Refrigerate for 3 hours
  • Mix in Frito’s Chili Cheese Chips before serving

Food Faves “Cody’s Buffalo Wing Dip”

After a few weeks at home, we’re all looking for new recipes to avoid cooking the same five dishes over and over again.

Over the next few weeks, we’ll be sharing some of Arkansas Valley Electric employees’ go-to quick recipes.

This week’s recipe is by AVECC Multimedia Specialist, Barbara Jenkins of Scranton.

  Cody’s Buffalo Wing Dip

“My husband introduced me to a 4-ingredient dip he learned in college. Years later, it is one of our go-to snacks, lunches, and movie night specials. We like to eat the dip with chips, crackers, and even as a sauce on chicken tacos!” -Barbara Jenkins

Ingredients:

cream cheese

canned chicken chunks

Frank’s RedHot Wings Buffalo Sauce

Ranch Dressing

Tools: mixing bowl, stirring spoon, hand mixer (optional)

Servings: Approximately 6 servings

Time: 10 minutes

  1. Place cream cheese in a mixing bowl. (I always microwave the cream cheese 30 seconds to make it easier to stir.)
  2. Drain canned chicken chunks, so no water is left.
  3. Pour chicken chunks in the mixing bowl.
  4. Stir cream cheese and chicken chunks (for a creamier dip, use a hand mixer)
  5. Add buffalo sauce to taste (I used 1/3 cup for this batch.)
  6. Add Ranch Dressing to taste. (I used 4 tablespoons for this batch.)
  7. Stir all ingredients until evenly distributed.
  8. Dip the chips and enjoy!

NOTE: The dip can be served warm or cold.
